 Spinach Bites recipe
on Sunday, June 13th at 7:00 PM!
You can cook along with her, or just watch for fun!

 
Ingredients Needed:
2 Tbs olive oil
2 - 10 oz pkgs frozen spinach, thawed & drained
1 cup grated cheddar (or more to taste)
8 oz crumbled feta (or more to taste)
6 eggs (or equivalent)

Variation 1:
This was my grandmother's original recipe:  Replace feta with 8oz farmer cheese.  
Add salt to taste.
 
Variation 2 - Non-Dairy:
Replace Feta with 8oz grated firm or extra-firm tofu.  Replace cheddar with soy cheddar.  
Add salt to taste.


 
 Kitchen items needed:
9x13 baking dish
